Preheat oven to 425 degrees F. Bake New York Brand® Texas Garlic Toast according to package directions. Cool and cut into 1 1/2" pieces and place in large bowl.
Lower oven to 375 degrees F.
Heat 2 tablespoons oil in a small skillet over medium heat, add onions and cook until tender. Add cooked onions, lemon zest, oregano, parsley, stock and pepper to bread and combine well. Fill cavity of chicken with stuffing and truss bird with kitchen twine.
Place bird in roasting pan and rub chicken with remaining 2 tablespoons oil. Season bird with salt and pepper.
Roast chicken for about 2 hours or until juices run clear. Serve.
