Roasted Chicken with Garlic Lemon Stuffing

Give your roasted chicken a zesty flavor with this delcious recipe for garlic lemon stuffing featuring New York Brand® Texas Garlic Toast.

New York Brand®4 slices  New York Brand® Texas Garlic Toast
Other Ingredients
One 4-pound  whole chicken
1/4 cup  olive oil, divided
1 cup chopped onions
Zest of 1 small lemon
1 1/2 teaspoons fresh oregano, chopped or 1/2 teaspoon dried
1/4 cup chopped parsley
3/4 cup chicken stock
Salt and pepper, to taste
Preparation:

Preheat oven to 425 degrees F. Bake New York Brand® Texas Garlic Toast according to package directions. Cool and cut into 1 1/2" pieces and place in large bowl.

Lower oven to 375 degrees F.

Heat 2 tablespoons oil in a small skillet over medium heat, add onions and cook until tender. Add cooked onions, lemon zest, oregano, parsley, stock and pepper to bread and combine well. Fill cavity of chicken with stuffing and truss bird with kitchen twine.

Place bird in roasting pan and rub chicken with remaining 2 tablespoons oil. Season bird with salt and pepper.

Roast chicken for about 2 hours or until juices run clear. Serve.
